Here is my recipe for the flatbread:
- 2 cups white whole wheat flour (I like white whole wheat best because it yields a much lighter crust)
- 1 tbsp garlic powder (or minced fresh if you have!)
- 1 tsp basil
- 1 tsp oregano
- ~1 cup water
Preheat the oven to 400 degrees F.
In a large bowl, whisk together the flour, garlic powder, basil and oregano. Add water slowly, approximately 1/4 cup at a time, beating with a hand mixer. Keep an eye on your dough - you want it to be moist and to just be able to form it into a ball but you don't want it to be too wet! Cut dough into 4 equal parts and transfer each onto a seperate sheet of parchment paper that has been floured. Flour the top of your dough and cover with another sheet of parchment paper - now you're ready to roll! Roll out to 1/4 inch thickness.
Transfer dough onto a baking sheet and bake for 10 minutes.
Now, for the star of the meal, the Roasted Tomato Pesto Sauce. O-M-G. I made this pesto on Sunday so that the flavors could really develop. You can find the recipe for the pesto at Oh She Glows - I love the recipes that Angela posts on her blog! They are all 100% vegan, most are gluten & soy free and she uses minimal or no packaged or canned items in all of her recipes!
I topped the flatbreads with the pesto and a small sprinkling of Daiya cheddar shreds. It was absolutely incredible and EASY!! I will make this again and again and again!

So I already failed on my promise to myself to wake up early every morning this week...yup, I slept in until 7am this morning. It was totally worth it, I felt great when I woke up! Luckily, I got out of work about an hour earlier than I expected which gave me the opportunity for a quick 2 mile run. I had planned on going for 3, but I happened to run past my sister-in-law who babysits for a kid around the block so I stopped to chat for a bit. It was so hot out (90 degrees!) and I was ready to be done at that point, so I ran the half mile home from there and called it quits. I'm not sure what my time was today, Map My Run got screwed up when I stopped, but my guess is about a 10min/mile.
And then this happened....
I wonder who could have done such a thing....
What a guilty look he has on his face! Luckily it was just a pair of headphones...and I couldn't stop laughing when I saw it!
